Differences between white butter and yellow butter?

Growing up in a typical Punjabi household is synonyms for white butter on your parathas, wouldn’t you agree? Delicious memories come to your mind when we talk about Makke di Roti and Sarso da Saag which seems incomplete without the creamy butter. Fresh white butter made at home has its own charm. White butter comes with their health benefits as compared to yellow or table butter. Another reason that makes white butter better is that it does not contain the harmful trans-fat which has been linked with various chronic ailments like heart disease, obesity and diabetes.

How is white butter made?

It is a simple process and usually made in homes in India. Remove cream from the milk, add some cold water to it and then churn it. During the churning process, the whey (water) gets separated and is kept in another bowl. The butter that was made during the churning process was then collected and patted dry so as to remove any excess moisture and then stored.

Here are some uses of white butter:

  • To make clarified butter or ghee -White butter is used to make pure desi ghee at home. You need to first take the white butter and heat it for a few hours until the ghee starts to separate itself from the residue and strain it once it cools down.
  • To make flavoured butter: Yellow butter is salted and its taste overpowers anything that you add to it. On the other hand, white butter is unsalted and has a light subtle flavour. Hence, you can mix honey to spruce up the flavours and use it like regular butter.
  • Buttermilk with whey: Don’t throw the leftover whey as it can be consumed as sweetened or spiced buttermilk. The drink is popularly enjoyed in South India. It can be used to make soft cheese at home as dips or as sandwich fillings.

 

Differences between yellow and table butter:

  • The major difference between market sold yellow butter and white butter is the nutrient value. While yellow butter contains excess salt, trans fats, sugars, and coloring agents, white butter, on the contrary, contains neither of these elements and is rich in nutrients like vitamins A and D.
  • Yellow butter contains hidden synthetic fats which can lead to weight gain. While, white butter,  contains healthy calories which are essential for weight loss and a healthy body.
  • White butter contains saturated fats which retain immune boosting essentials like calcium, phosphorus and vitamins A and D. This is essential to use to boost your immunity.

Overall, white butter works as a healthier option rather than going for the traditional table butter. Many butter packaging claim low calorie intake, however the fact that its processed means there will be additives.
